This paper goes into depth about Chinese mythological Geography.
These lecture notes cover both Roman and Norse Mythology. 
-The Roman portion goes into a few different myths, including that of Romulus and Remus. Explains the similarities between roman and greek gods. Discusses the pantheon, and how to write out a lineage. 
-In the Norse portion, there is a semi-length dive into the different goddesses, gods, and "monsters"/evil beings that were apart of their mythology.
In MCC's mythology course, the second week covered the Sumerian and Egyptian mythologies.
