Dissecting Food Deserts
Although many scholars support government-funded nutritional programs and report
positive effects the programs have on food deserts, the actual numbers are minuscule when
compared to the number of hungry individuals in these food-insecure areas. Citizens of food
deserts often struggle to find healthy food options as well as affording nutritious food. Because
the problem of food deserts is multifaceted, new programs must be put in place to assist with
transportation or access to supermarkets, and supplemental nutritional programs need to be
reevaluated to allow for more consistent eligibility and adequate funds to purchase items.
Food deserts are areas in communities that suffer from food insecurity due to a lack of
income or access to nutritional resources. Ganong and Harmon (2019) define a food desert as
"the general unavailability of healthful food in socially disadvantaged and/or economically
depressed geographic areas" (pg. 40). Classically, food deserts are in rural areas, but urban areas
are often affected as well. Low-income areas where residents have limited or no access to
grocery stores or supermarkets are considered food deserts (Wu et al., 2017). It is not only
limited access to produce that fosters food deserts, limited income, non-reliable transportation,
and lack of education of nutritional information all directly link to areas with little to no food
security. Food deserts affect communities in many ways, including chronic diseases, obesity,
child development, and directly impact the quality of life. Without access to healthy diet options,
residents of these areas are often at high risk for chronic diseases (Ganong & Harmon, 2019).
With the rising cost of healthcare, low-income communities cannot afford to have chronic health
disorders just as they cannot afford healthy foods. As Stack (2015) states in Examining
Relationship Between Food Deserts and Health, "With scientific studies confirming diet as an
important factor as a health indicator, we must look at ensuring that all communities and people
